No weenies, just beanies ... OR Beans, beans the magical fruit

I've been looking for a really good bean recipe. Something that is "guy-easy" .. meaning you open things, dump things and heat things. Its how I roll when crockpot cooking.

This recipe, Cowboy Beans, from over at "A Year of Slow Cooking" is really good. It fits the bill for "guy-easy" too. Okay I had to chop and onion and brown ground beef.

I do admit that I was naughty and deviated from the recipe a bit. I had no dried pinto beans. I sub'd canned red kidney beans. Worked for me.

One thing more though.

Next time I make these and oh yeah there will be a next time, I will use less water methinks. I'd like them a bit more "stewie"/thicker. I admit I may have flat-out used more water than I should have though. I measure most stuff by eye.

So, in closing ...

This was easy.
It was good.

I must make this. Did you add the jalapenos? or was it spicy enough already?

I did add the jalapenos. And um, darn it I forgot to say it but I also added about 3 tbls of Sambal Oelek . I'm addicted to that stuff.

Just a thought, if you used already softened beans, you def wouldn't need as much water/they wouldn't be absorbing any...so, that will change your liquid addition...
Not that you didn't already know that when you cooked it...that was just the first thing that popped into my head at your comment...
Have you ever used a cola for the liquid in a recipe like this instead of water...good for baked beans and such if you like a sweeter taste...maybe a thought for next time...
Hope things are well there...haven't conversed much lately since you have the Isadoodle and I have to work all the time!!!! ha (I'm loving my job right now, just wish the maid would show up soon...nothing's getting done at home! LOL)

Dawn - good suggestions! And I must come clean, I totally didn't see that whole dried vs pre-wetted bean thing. Though pre-wet beans doesn't sound good at all does it?

Izzy is doing great .. and Isadoodle is a very cute name, lol!

And yeppers we need to catch back up sometime! I figured that, like me, you're busy with work and the day-to-day stuff so worries.
