For 99 Its Tuna Salad Time

I saw two cans of tuna on the counter. Inspiration jumped out of the cabinet and before I could even think, I was caught up in creating this recipe. See, I didn't know how to make tuna salad from scratch. So apparently the muse of the kitchen thought I needed to learn.

Naturally I turned to my trusty laptop and google - the source of all answers and opinions for planet Earth. Someone should really do a Discovery Channel special on that - something like Nerd Earth: The Collective Mind - instead of that Planet Earth stuff they do, I mean really, who goes outside anymore right? :P

But I digress .. as usual. I mean I'm always trailing off onto other subjects instead of sticking with the topic at hand. Wow, you should see this bird outside - it's pretty. Hold on ...

Okay back. Um, reading my post thus far, looks like I owe you a recipe. Here goes. The end of my tale is that I made this one up from my own brain and partially based on what I found in several other internet recipes.

I really really like it. It was spoon lickin good .. I mean like when you're making a cake and you just have to lick the spoon .. that kind of good. But maybe I was just in the mood for tuna salad.


Rob's Tuna Salad Sandwich Recipe

Ingredients
  • 2 (5-6 ounce) can of tuna fish (if packed in water, drain it, and add a teaspoon of good quality olive oil)
  • 2/3 cup of cottage cheese
  • 4 Tablespoons of mayonnaise
  • 1/2 red onion, chopped finely
  • 2 Tbsp of Jalapenos
  • 1 tsp Red Cayenne Pepper
  • 1 tsp Garlic Powder
  • Juice of half of a lemon (or to taste)
  • Pinch or two of dill
  • 4 Tbsp minced fresh parsley
  • 2 tsp of Dijon mustard
  • 2 hard-boiled eggs, finely chopped
  • Salt and pepper to taste

(optional - lettuce and sliced tomatoes)

Slices of bread (French would be good but I used some home-made bread), lightly toasted

Method

Mix all of the ingredients. Serve on toast, either open faced, or in a regular sandwich with lettuce and tomatoes.

Yield is about 6-8 cups .. honestly I'm not sure. Our Pyrex bowl has it printed on the bottom inside the bowl .. which you could read from the bottom .. if you could read it backwards, while upside down, trying not to spill the bowl of tuna salad, with a German Shepherd watching you, hoping for failure.

Just get a big bowl okay?

Funny thing: Just before I read this blog post, I was stashing something from the countertop into a cupboard. while I was doing that, I picked up a can of tuna fish and moved it to a higher shelf. I thought about making something for dinner with it and then along you come with this great recipe. My husband doesn't like cottage cheese but I could make his without it.
